Lemony Artichoke Crostini Recipe

Ingredients
  • 1 lemon
  • 2 15-ounce cans artichokes, rinsed and drained
  • ½ cup pine nuts
  • 2 tablespoons olive oil
  • ½ teaspoon coarse salt
  • ⅛ teaspoon pepper
  • 2 tablespoons minced chives
  • 1 loaf baguette
Directions
  1. Preheat oven to 400 F.
  2. Zest the lemon and juice 2 teaspoons of the juice.
  3. Add the lemon zest, lemon juice, artichokes, pine nuts, olive oil, salt, and pepper to a food processor.
  4. Pulse about 15-20 times to break down the ingredients but don't over process to a paste.
  5. Remove the mixture from the food processor, add to a bowl and add the chives.
  6. Slice the bread into ½-inch slices and place on a baking sheet.
  7. Bake for 6-8 minutes or until toasted and lightly browned.
  8. Top the bread with the artichoke mixture.
  9. The lemony artichoke crostini is ready to serve.
