Ingredients
  • 4 boneless and skinless chicken breasts
  • 2 oranges
  • 1 lime
  • 3 garlic cloves, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 3 tablespoons honey
  • 2 tablespoons canola oil
  • 2 tablespoons soy sauce
  • ¼ cup chopped parsley
  • ¼ cup sliced scallions
  • Lime wedges, for serving
Directions
  1. Zest the oranges and lime into a large bowl.
  2. Juice the oranges and lime and add to the zest.
  3. Add the garlic, salt, pepper, paprika, cumin, honey, canola oil, soy sauce, and parsley to the bowl. Whisk together.
  4. Add the chicken breasts to the bowl and turn to coat in the marinade. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  5. Preheat the oven to 400 F.
  6. Preheat an oven-safe skillet over medium-high heat for 2 minutes.
  7. Add the chicken breasts and sear on each side for 2 minutes without moving. Remove and sear remaining breasts.
  8. Return all breasts to the skillet and brush with leftover marinade.
  9. Bake the chicken for 10-15 minutes, or until a meat thermometer inserted in the thickest part of the breast reads 165 F.
  10. Slice chicken thinly against the grain and serve hot with lime wedges and scallions.
