Colorful Carrot And Goat Cheese Frittata Recipe

Ingredients
  • 1 bunch colorful carrots, peeled
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 2 teaspoons lemon juice
  • ½ teaspoon salt
  • Black pepper, to taste
  • 8 eggs
  • 5 ounces goat cheese
Directions
  1. Preheat oven to 400 F.
  2. Line a baking dish with parchment paper.
  3. Cut carrots in half lengthwise.
  4. Place carrots in the prepared baking dish and toss with olive oil, maple syrup, and lemon juice.
  5. Season carrots with salt and black pepper.
  6. Transfer to the oven and roast for 20 minutes.
  7. Meanwhile, whisk the eggs in a large bowl.
  8. Grease a casserole dish with cooking spray or butter.
  9. Transfer the roasted carrots to the casserole dish.
  10. Pour the eggs into the baking dish with the roasted carrots.
  11. Dollop all over with goat cheese.
  12. Bake for 15-20 minutes until the eggs are puffed and set.
  13. Allow to cool for 5 minutes before slicing into wedges and serving.
