Vegan Chocolate Chip Cookies Recipe

Ingredients
  • 1 tablespoon ground flax seed
  • ½ cup vegan butter, softened
  • 1 cup coconut sugar
  • 1 ½ cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 ¼ cups vegan chocolate chips
Directions
  1. Preheat the oven to 350 F.
  2. In a small bowl combine the ground flax with 3 tablespoons of water
  3. In a large bowl combine the butter and sugar with a hand mixer.
  4. Add the flour, cornstarch, baking soda, cinnamon, salt, flax mixture, and 2 tablespoons of water. Mix with the hand mixer until combined. If the batter is too dry add 1 more tablespoon of water or non-dairy milk.
  5. Stir in the chocolate chips.
  6. Using about 1 ½ tablespoons of the cookie batter, form dough into 24 balls and place on 2 cookie sheets lined with parchment paper.
  7. Bake the cookies for 10 minutes then let them cool for 10 minutes on the sheet pan.
  8. Transfer to a cooling rack and cool for 5 minutes. The cookies are ready to serve.
