Sweet and Savory Sweet Potato Waffles Recipe

Ingredients
  • 1 large sweet potato (about ½ pound), peeled and diced
  • 2 cups all-purpose flour
  • 2 tablespoons light brown sugar
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 ½ cups milk
  • ⅓ cup (⅔ stick) butter, melted
  • 2 eggs
Directions
  1. Add sweet potato to a small saucepan and cover with water. Bring to a boil, then cook over medium heat for 8-10 minutes, or until tender.
  2. Drain sweet potato.
  3. Return sweet potato to the pan and mash until smooth. Set aside.
  4. Preheat your waffle iron.
  5. In a mixing bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
  6. In a separate mixing bowl, whisk together the mashed sweet potato, milk, butter, and eggs.
  7. Using a wooden spoon, combine dry and wet ingredients into a smooth batter.
  8. Grease the preheated waffle iron.
  9. Pour in enough batter to cover just under ¾ of the waffle iron plates.
  10. Cook waffle until crisp, about 4-5 minutes.
  11. When done, transfer waffle to a wire rack and keep warm.
  12. Repeat process with remaining waffle batter.
  13. Serve the waffles right away with your chosen toppings.
