Broccoli Steaks With Romesco Recipe

Ingredients
  • 2 large heads of broccoli
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 (7-ounce) jar roasted red peppers
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • ½ cup blanched almonds
  • 2 cloves garlic, peeled
  • ¼ cup chopped parsley
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • ½ teaspoon Aleppo pepper or red pepper flakes
  • 1 tablespoon red wine vinegar
  • 1 teaspoon lemon juice
  • ¼ cup olive oil
Directions
  1. Preheat the oven to 425 F.
  2. Slice broccoli into ½-inch wide steaks.
  3. Trim the stems to about 1 inch.
  4. Arrange broccoli on a foil-lined sheet tray.
  5. Drizzle with olive oil and season with salt and pepper, tossing gently if needed.
  6. Roast for 20-25 minutes, flipping halfway through. Broccoli should be fork tender and slightly browned.
  7. In the meantime, make the romesco by combining all of the ingredients in a food processor.
  8. Pulse until almost smooth.
  9. To serve, spread romesco on a plate and top with broccoli steaks.
