Broccoli Steaks With Romesco Recipe

Ingredients
2 large heads of broccoli
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1 (7-ounce) jar roasted red peppers
1 (14.5-ounce) can fire-roasted diced tomatoes
½ cup blanched almonds
2 cloves garlic, peeled
¼ cup chopped parsley
1 teaspoon paprika
2 teaspoons salt
½ teaspoon Aleppo pepper or red pepper flakes
1 tablespoon red wine vinegar
1 teaspoon lemon juice
¼ cup olive oil
Directions
Preheat the oven to 425 F.
Slice broccoli into ½-inch wide steaks.
Trim the stems to about 1 inch.
Arrange broccoli on a foil-lined sheet tray.
Drizzle with olive oil and season with salt and pepper, tossing gently if needed.
Roast for 20-25 minutes, flipping halfway through. Broccoli should be fork tender and slightly browned.
In the meantime, make the romesco by combining all of the ingredients in a food processor.
Pulse until almost smooth.
To serve, spread romesco on a plate and top with broccoli steaks.
