Ginger and Pear Buttermilk Scones Recipe

Ingredients
  • 2 small pears
  • 2 cups all purpose flour, plus more for dusting
  • ⅓ cup granulated sugar
  • 2 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 stick butter, cold, cut into ¼-inch cubes
  • ⅔ cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh grated ginger
  • 3 tablespoons brown sugar
Directions
  1. Preheat the oven to 400 F.
  2. Line a baking sheet with parchment.
  3. Peel the pears and remove the core. Dice into ¼-inch cubes and measure 1 cup. Set aside.
  4. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  5. Add the butter to the flour mixture and repeatedly pinch between two fingers until all of the butter is broken into pea-sized pieces or smaller.
  6. Add the diced pears and toss into the flour mixture.
  7. Add the buttermilk, vanilla, and fresh ginger to the dry ingredients. Stir with a spatula until a soft dough forms.
  8. Empty the dough onto a lightly floured work surface. Pat the dough into a 6-inch circle.
  9. Press the brown sugar into the top of the dough and cut into 8 triangles.
  10. Place scones on the cookie sheet. Bake 22-25 minutes, until golden brown and cracked on top. Serve warm.
