Smoky White Queso Dip Recipe

Ingredients
  • 1 tablespoon butter
  • 1 small jalapeño, diced
  • 1 clove garlic, minced
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon kosher salt
  • 2 tablespoons mezcal
  • ¼ cup canned fire-roasted green chiles, drained
  • ⅓ cup half-and-half
  • ½ pound white American cheese, cubed
  • 2 tablespoons sliced scallions
  • Tortilla chips, for serving
Directions
  1. Melt butter in a medium pot over medium heat.
  2. Add jalapeño, garlic, paprika, chili powder, and salt.
  3. Cook for 1 minute, stirring occasionally.
  4. Add mezcal.
  5. Cook, stirring, until mezcal evaporates, about 2 minutes.
  6. Add the green chiles, half-and-half, and cheese.
  7. Cook for 3-4 minutes, stirring often, until fully melted.
  8. Pour queso into a serving bowl, garnish with scallions, and serve with tortilla chips.
