Nut-Free Greek Yogurt Granola Bars Recipe

Ingredients
  • 1 cup Medjool dates
  • 1 ½ cups frozen mixed berries
  • 2 tablespoons maple syrup
  • 2 cups rolled oats
  • 3 tablespoons ground flax seed
  • 1 cup sunflower seed butter
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 ½ cups sweetened vanilla Greek yogurt
Directions
  1. Soak the dates in hot water for 20 minutes.
  2. Add the frozen berries to a medium pot over medium heat.
  3. Add the maple syrup, stir, and cook on low for about 10 minutes or until the berries are thawed and warm. Remove from heat until ready to use.
  4. Drain the dates and remove the pits.
  5. Add the soaked dates to a food processor and blend until a paste forms.
  6. Add the oats, flax seed, sunflower seed butter, cinnamon, and vanilla to the food processor and blend well.
  7. Transfer the mixture to a 9x12-inch parchment paper-lined baking dish and press down firmly.
  8. Spread the yogurt on top of the oat mixture.
  9. Spoon the berries in several spots on top of the oat mixture.
  10. Cover and place the baking dish into the freezer for 2 hours.
  11. Cut into squares and serve.
