Simple Flavor-Packed Tomato Confit Recipe

Ingredients
  • 12 ounces cherry tomatoes (about 1 ½ cups)
  • 2 cups extra virgin olive oil, or as needed
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon Aleppo pepper
Directions
  1. Preheat the oven to 300 F.
  2. Spread the cherry tomatoes into a 9x11-inch or smaller baking dish.
  3. Add the olive oil so that the tomatoes are covered halfway, adding extra if needed.
  4. Stir the tomatoes with sugar, salt, pepper, and Aleppo pepper.
  5. Roast for 30 minutes, then gently stir the tomatoes.
  6. Roast for another 30 minutes, or until the tomatoes are very wrinkly and completely soft.
  7. Serve warm or store in a sealable jar.
