Hearty Dill Pickle Soup Recipe

Ingredients
1 tablespoon olive oil
½ red onion, diced
2 carrots, diced
6 Yukon potatoes, peeled and diced
¾ cup diced Kosher pickles
3 cups vegetable or chicken broth
¼ cup pickle juice
1 teaspoon salt
½ teaspoon pepper
1 cup sour cream
2 tablespoons chopped fresh dill
Directions
Add the oil to a large pot over medium heat.
Add the onion and carrots and sauté for 8 minutes.
Add the potatoes, pickles, broth, pickle juice, salt, and pepper. Bring to a boil, then simmer for 20-25 minutes or until the potatoes are tender.
Blend half of the soup with either an immersion blender or stand-up blender.
If you used a stand-up blender, return the soup to the pot, and add the sour cream and the dill.
Serve the soup, optionally garnished with more fresh dill.
