Hearty Dill Pickle Soup Recipe

Ingredients
  • 1 tablespoon olive oil
  • ½ red onion, diced
  • 2 carrots, diced
  • 6 Yukon potatoes, peeled and diced
  • ¾ cup diced Kosher pickles
  • 3 cups vegetable or chicken broth
  • ¼ cup pickle juice
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup sour cream
  • 2 tablespoons chopped fresh dill
Directions
  1. Add the oil to a large pot over medium heat.
  2. Add the onion and carrots and sauté for 8 minutes.
  3. Add the potatoes, pickles, broth, pickle juice, salt, and pepper. Bring to a boil, then simmer for 20-25 minutes or until the potatoes are tender.
  4. Blend half of the soup with either an immersion blender or stand-up blender.
  5. If you used a stand-up blender, return the soup to the pot, and add the sour cream and the dill.
  6. Serve the soup, optionally garnished with more fresh dill.
