Veganized Gigi Hadid Pasta Recipe

Ingredients
8 ounces shell pasta
1 tablespoon olive oil
½ small red onion, diced
1 clove garlic, minced
¼ cup tomato paste
2 tablespoons vodka
1 cup unsweetened coconut milk
3 tablespoons nutritional yeast
1 tablespoon vegan butter
1 teaspoon coarse salt
1 teaspoon red pepper flakes
Directions
Fill a large pot with water and bring to a boil.
Cook pasta according to package instructions, and reserve ½ cup pasta cooking water before draining.
Meanwhile, add oil to a large frying pan over medium heat.
Add onion and garlic and cook for 5 minutes.
Add tomato paste and cook for 1 more minute.
Stir in the vodka, coconut milk, and nutritional yeast and cook for 2 minutes.
Add the cooked pasta, ¼ cup reserved pasta water, butter, salt, and red pepper flakes. Toss until everything is combined and the butter has melted.
Reduce heat to a simmer and cook, stirring, for 1 more minute. Add the remaining pasta water to thin out the sauce, if desired.
Serve warm and topped with fresh basil, if desired.
