Veganized Gigi Hadid Pasta Recipe

Ingredients
  • 8 ounces shell pasta
  • 1 tablespoon olive oil
  • ½ small red onion, diced
  • 1 clove garlic, minced
  • ¼ cup tomato paste
  • 2 tablespoons vodka
  • 1 cup unsweetened coconut milk
  • 3 tablespoons nutritional yeast
  • 1 tablespoon vegan butter
  • 1 teaspoon coarse salt
  • 1 teaspoon red pepper flakes
Directions
  1. Fill a large pot with water and bring to a boil.
  2. Cook pasta according to package instructions, and reserve ½ cup pasta cooking water before draining.
  3. Meanwhile, add oil to a large frying pan over medium heat.
  4. Add onion and garlic and cook for 5 minutes.
  5. Add tomato paste and cook for 1 more minute.
  6. Stir in the vodka, coconut milk, and nutritional yeast and cook for 2 minutes.
  7. Add the cooked pasta, ¼ cup reserved pasta water, butter, salt, and red pepper flakes. Toss until everything is combined and the butter has melted.
  8. Reduce heat to a simmer and cook, stirring, for 1 more minute. Add the remaining pasta water to thin out the sauce, if desired.
  9. Serve warm and topped with fresh basil, if desired.
