Meal Prep-Friendly Ramen Jars Recipe

Ingredients
  • ¼ cup miso paste
  • ¼ cup soy sauce
  • 2 tablespoons chili paste
  • 1 tablespoon hoisin sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon ginger powder
  • 2 diced bell peppers (any color combination)
  • 4 diced carrots
  • 1 cup diced red cabbage
  • 2 cups shelled edamame
  • 3 ramen noodle bundles, uncooked
  • 3 chopped scallions
Directions
  1. In a small pot combine the miso, soy sauce, chili paste, hoisin sauce and 2 tablespoons of water.
  2. Stir frequently over medium heat for about 5 minutes, then remove from heat.
  3. Distribute the sauce into the bottom of 3 large, wide-mouth jars that have lids.
  4. Now evenly distribute the carrots, red peppers, red cabbage, and edamame into the jars.
  5. Add a ramen noodle bundle to each jar.
  6. Top with scallions.
  7. Put the lids on and store in the fridge for up to a week.
  8. When ready to eat, pour boiling water into the jar, cover, and let sit for 5 minutes.
  9. Enjoy the ramen right out of the jar or pour into a bowl and serve.
