Strawberry Marshmallow Fudge Recipe

Ingredients
  • 1 ½ cups freeze-dried strawberries
  • 1 ¾ cups granulated sugar
  • ⅔ cup evaporated milk
  • ½ cup (1 stick) butter, cubed
  • 1 (7-ounce) package marshmallow creme
  • 2 cups white chocolate chips
  • 1 teaspoon vanilla extract
Directions
  1. Line an 8x8-inch baking dish with aluminum foil, then grease with nonstick cooking spray and set aside.
  2. Add freeze-dried strawberries to the bowl of a food processor and pulse until finely ground.
  3. Set aside.
  4. Add sugar, evaporated milk, and cubed butter to a heavy-bottomed saucepan and stir until combined.
  5. Warm over medium-low heat, stirring often, and bring to a boil.
  6. Once boiling, continue heating until the mixture registers 235 F on a candy thermometer (about 5 minutes).
  7. Remove mixture from heat.
  8. Stir in the ground strawberries, white chocolate chips, marshmallow creme, and vanilla extract until smooth and melted.
  9. Transfer mixture to the prepared pan and let sit at room temperature for about 4 hours (or chill in the refrigerator for about 2 hours) until fully set.
  10. Remove fudge from the baking dish and cut into small squares.
  11. Serve at room temperature.
