Crispy Baked Chicken Tenders Recipe

Ingredients
  • 2 cups panko breadcrumbs
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon garlic powder
  • ½ teaspoon cayenne
  • 1 tablespoon olive oil
  • 2 pounds boneless chicken tenders
  • ⅔ cup mayonnaise
Directions
  1. Preheat the oven to 400 F.
  2. Line a baking sheet with aluminum foil. Coat with cooking spray.
  3. Add the panko, salt, garlic powder, cayenne, and olive oil to a medium bowl.
  4. Stir to combine.
  5. Pour the breadcrumb mixture onto the baking sheet.
  6. Bake for 8 to 10 minutes, until golden brown. Let cool briefly.
  7. Add chicken tenders and mayonnaise to a mixing bowl and stir until evenly coated.
  8. Add the panko mixture to a shallow dish. Dredge each side of the chicken tenders in the crumb mixture until coated.
  9. Place the coated tenders on the baking sheet.
  10. Bake 13 to 15 minutes, or until a thermometer inserted in the thickest part of a tender reads 165 F.
  11. Serve hot with fresh lemon wedges, if using.
