Carrot Cake Overnight Oats Recipe

Ingredients
  • 1 cup rolled oats
  • 1 cup Greek yogurt
  • ½ cup oat milk
  • ¼ cup finely shredded carrot, plus more for garnish
  • 2 tablespoons maple syrup
  • ¼ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ⅓ cup pecans, chopped, plus more for garnish
  • 2 tablespoons almond butter
Directions
  1. Combine oats, Greek yogurt, and oat milk in a medium mixing bowl.
  2. Stir in the carrot, maple syrup, vanilla, cinnamon, and ginger.
  3. Evenly divide the pecans between 2 jars.
  4. Top the pecans with the oat mixture.
  5. Cover the jars and refrigerate overnight.
  6. The next day, top the oats with a scoop of almond butter.
  7. Garnish with extra shredded carrot and pecans, if desired, and serve cold.
