Grilled Corn and Avocado Guacamole Recipe

Ingredients
  • 3 firm but ripe avocados
  • 2 ears of corn, husked
  • ½ onion, peeled
  • 1 jalapeño
  • 1 large tomato, diced
  • 1 garlic clove, minced
  • ¼ cup chopped cilantro
  • 2 tablespoons lime juice
  • ½ teaspoon salt
Directions
  1. Preheat the grill to medium-high heat.
  2. Cut the avocados in half and remove the pits.
  3. Place the avocados cut side down on the grill along with the corn, onion, and jalapeño.
  4. Cook the avocados for about 15 minutes until the underside is charred and then let them cool for 15 minutes.
  5. Cook the remaining vegetables for about 10 more minutes, rotating frequently.
  6. Scoop out the avocado flesh into a large bowl.
  7. Mash the avocado with a fork.
  8. Discard the jalapeño skin and seeds and chop.
  9. Dice the onion.
  10. Remove the kernels from the corn cob with a sharp knife.
  11. Add the corn, jalapeño, and onion to the bowl with the avocado along with the tomato, garlic, and cilantro.
  12. Add the lime juice and salt, then stir to combine.
  13. The guacamole is ready to serve.
