Grilled Tofu With Mango Salsa Recipe

Ingredients
  • ¼ cup + 1 tablespoon lime juice, divided
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 2 tablespoons soy sauce
  • ½ teaspoon garlic granules
  • 1 (16-ounce) package super firm tofu, cut into four ¾-inch slabs
  • 2 cups diced mango
  • 1 avocado, diced
  • ½ red pepper, diced
  • ¼ cup diced red onion
  • ¼ cup chopped cilantro
  • ¼ cup chopped pickled jalapeño
  • ½ teaspoon salt
Directions
  1. In a small bowl combine ¼ cup lime juice, vinegar, maple syrup, soy sauce, and garlic granules.
  2. Place the tofu in a container and coat it with the marinade, brushing it on to cover all sides. Let this marinate for at least 1 hour or up to 2 days in advance.
  3. Pre-heat the grill to medium-high heat.
  4. While the tofu is marinating, make the mango salsa by combining the mango, avocado, red pepper, red onion, cilantro, jalapeño, remaining 1 tablespoon of lime juice, and salt.
  5. Place the tofu slabs on the grill and cook for 6-8 minutes on each side until you see grill marks.
  6. Serve the grilled tofu with the mango salsa.
