Spicy Italian Sausage and Spinach Tortellini Soup Recipe

Ingredients
  • 1 pound ground Italian sausage
  • 1 (14-ounce) can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons Italian seasoning
  • ½ teaspoon red pepper flakes, or to taste
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 (9-ounce) package cheese tortellini
  • 2 cups fresh spinach
  • Salt and black pepper, to taste
  • ½ cup grated Parmesan, or to taste
Directions
  1. Add the sausage to a large soup pot and cook over medium heat, breaking it up with a wooden spoon, until browned and cooked through.
  2. Stir in the diced tomatoes, tomato paste, Italian seasoning, and red pepper flakes. Let cook for an additional 2–3 minutes.
  3. Pour in the broth and bring to a simmer.
  4. Reduce the heat to low and stir in the cream. Simmer for 10 minutes, until slightly thickened.
  5. Stir in the tortellini and spinach. Cook until the pasta is tender and the spinach is wilted, about 5–7 minutes.
  6. Season the soup with salt and pepper, to taste.
  7. Ladle the soup into bowls and top with Parmesan. Garnish with fresh microgreens and serve with bread, if desired.
