Saucy Buffalo Chicken Meatballs Recipe

Ingredients
  • ⅓ cup breadcrumbs
  • 3 tablespoons chopped chives, divided
  • 2 tablespoons chopped parsley
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 egg
  • 1 pound ground chicken
  • ¼ yellow onion, grated
  • 2 stalks celery, minced
  • 2 cloves garlic, minced
  • 1 ½ cups buffalo sauce
  • ¼ cup ranch dressing
  • 2 large carrots, peeled and cut into sticks
  • 2 stalks celery, cut into sticks
Directions
  1. Preheat the oven to 425 F.
  2. Line a baking sheet with aluminum foil and grease with cooking spray.
  3. Add the breadcrumbs, 2 tablespoons chives, parsley, salt, and pepper to a mixing bowl.
  4. Add the egg and stir to combine.
  5. Add the ground chicken, onion, celery, and garlic.
  6. Stir with your hands until combined.
  7. Portion the mixture into golf ball–sized meatballs about 1 ½ inches in diameter.
  8. Place the meatballs on the baking sheet.
  9. Bake the meatballs for 13 minutes.
  10. Add the buffalo sauce to a medium pot and bring to a simmer.
  11. Add the baked meatballs to the sauce and let simmer on low for 10 minutes, stirring occasionally.
  12. Drizzle the meatballs with ranch dressing and top with the remaining chives.
  13. Serve hot with carrot and celery sticks on the side.
