South Indian-Style Dry Banana Curry Recipe

Ingredients
  • 2 tablespoons coconut oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 green chiles, seeds discarded and diced
  • 1 teaspoon grated ginger
  • 3 garlic cloves, minced
  • 1 teaspoon coriander
  • ½ teaspoon chili powder
  • ½ teaspoon cumin powder
  • ½ teaspoon salt
  • ½ teaspoon turmeric powder
  • 4 ripe but firm bananas, peeled and sliced
Directions
  1. Add the coconut oil to a pan and bring the heat to medium high.
  2. Add the mustard seeds and cumin seeds and cook for 3-4 minutes until they are snapping.
  3. Add the chopped onion and green chiles and saute for about 5 minutes or until the onions turn translucent.
  4. Add the ginger and garlic and saute for another minute.
  5. Add coriander, chile powder, cumin powder, salt, and turmeric. Mix well and saute for a minute.
  6. Add sliced bananas to the pan and gently stir and cook for 10 minutes until the bananas are soft and browned but still holding their shape.
  7. Garnish with fresh cilantro leaves if desired and serve with optional rice and flatbread.
