Ingredients
2 cups seeded and diced ripe watermelon
¼ cup diced yellow bell pepper
¼ cup peeled and diced cucumber
¼ cup diced red onion
3 tablespoons finely chopped cilantro
2 tablespoons finely chopped mint
1 tablespoon lime juice
¼ teaspoon salt
Directions
Add all of the ingredients to a large bowl and toss gently until evenly mixed.
Taste and adjust for salt and lime juice if desired.
Serve immediately or refrigerate until ready to serve.
