Vegetable Chow Mein Noodle Soup Recipe

Ingredients
1 tablespoon sesame oil
2 garlic cloves, minced
2 carrots, diced
1 red bell pepper, sliced
½ small cabbage, chopped
3 cups chopped broccoli
4 cups vegetable broth
3 tablespoons soy sauce
1 tablespoon hoisin sauce
1 tablespoon Shaoxing wine
1 teaspoon sriracha
½ teaspoon salt
8 ounces uncooked chow mein noodles
½ cup bean sprouts
3 scallions, chopped
Directions
Add the oil to a large soup pot and bring the heat to medium.
Add the garlic, carrots, and red pepper, and saute for 8 minutes.
Add the cabbage, broccoli, broth, soy sauce, hoisin sauce, Shaoxing wine, sriracha, and salt. Bring to a boil, then cook on medium for 8 minutes.
Add the noodles, 3 cups water, and bean sprouts. Cook on medium-high for 10 minutes, or until the noodles are done.
Top with scallions, and serve.
