Hidden Vegetable Ravioli Lasagna Recipe

Ingredients
  • ¼ cup extra-virgin olive oil, divided
  • ½ cup diced yellow onion
  • ½ cup diced red bell pepper
  • ½ cup diced carrot
  • ½ cup diced zucchini
  • 1 large cloves garlic, minced
  • 1 cup spinach
  • ½ teaspoon salt
  • 1 (14.5-ounce) can diced San Marzano tomatoes
  • ¾ teaspoon Italian seasoning
  • 1 (20-ounce) pack fresh spinach ravioli (or preferred flavor)
  • 1 cup Ricotta
  • 1 ½ cups finely shredded Parmesan, divided
  • ¼ teaspoon ground black pepper
  • Optional Ingredients
  • 5 to 6 fresh basil leaves, for garnish
Directions
  1. Heat oven to 400 F. Lightly grease a 7 x 11-inch baking pan.
  2. In a medium pot, heat 1 tablespoon olive oil over medium high heat.
  3. Add the onions, red bell pepper, and carrots and saute for 5 minutes.
  4. Add zucchini, garlic, spinach, and salt. Saute until the spinach wilts.
  5. Add the diced tomatoes, remaining olive oil, and Italian seasoning.
  6. Reduce the heat to a simmer, cover and cook for 10 minutes until the vegetables are softened.
  7. Transfer the vegetables to a blender and blend until smooth.
  8. Spread half the marinara sauce on the bottom of the baking dish until evenly covered.
  9. Shingle half of the ravioli in an even layer.
  10. Spread all the ricotta and 1 cup of Parmesan over the ravioli.
  11. Add the remaining ravioli in an even layer.
  12. Spread the remaining hidden vegetable marinara sauce over the ravioli.
  13. Sprinkle with the remaining Parmesan and top with freshly ground black pepper.
  14. Cover the baking dish with aluminum foil and bake for 20 minutes.
  15. Remove the foil and broil for about 2 minutes until the cheese is golden brown.
  16. Garnish with fresh basil, if desired, and serve.
