Cherry Balsamic Flap Steak Recipe

Ingredients
  • 1 cup balsamic vinegar
  • 1 cup fresh cherries, pitted and halved, divided
  • ½ cup honey
  • 2 cloves garlic, minced, divided
  • 2 tablespoons olive oil, plus more for grill pan
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ½ pounds flap steak
Directions
  1. In a saucepan, combine the balsamic vinegar, ½ cup cherries, honey, minced garlic, olive oil, thyme, salt, and pepper.
  2. Bring to a boil and simmer for 15 minutes, until the cherries are softened.
  3. Strain the sauce, reserving the cherries and sauce separately.
  4. In a shallow dish, combine ½ cup cherry balsamic sauce with steak and marinate 2 to 4 hours refrigerated, turning occasionally.
  5. Remove the steak from marinade, discard the marinade.
  6. Heat a grill pan over high heat and brush with oil.
  7. Cook the steak 4 to 5 minutes per side for medium-rare (internal temperature of 130 to 135 F).
  8. Let rest 5 minutes then slice against the grain.
  9. Reheat the remaining cherry balsamic sauce and stir in the reserved cherries.
  10. Serve steak topped with cherry balsamic sauce and fresh thyme as desired.
