Barbecue Grilled Chicken And Pineapple Quesadilla Recipe

Ingredients
  • 2 chicken breasts
  • 3 tablespoons olive oil, divided
  • 2 teaspoons Cajun spice mix
  • ½ pineapple, sliced into long, flat strips
  • 1 red bell pepper, sliced into long strips
  • 4 large tortillas
  • 1 cup grated cheddar cheese
  • ¾ cup barbecue sauce
  • ¼ cup cilantro, plus extra for serving
  • ½ cup sour cream
  • 1 lime, cut into wedges
Directions
  1. Slice the chicken breasts in half.
  2. Coat the chicken breasts in 1 tablespoon olive oil and the Cajun seasoning.
  3. Coat the pineapple and red pepper in 1 tablespoon olive oil.
  4. Preheat a griddle pan or grill to a medium-high heat.
  5. Place the chicken breasts onto the pan, grilling on one side for 3 to 4 minutes.
  6. Flip the chicken, grilling for another 3 to 4 minutes until cooked through. Remove from the pan and set aside.
  7. Place the pineapple on the pan and grill for 3 minutes on one side.
  8. Flip the pineapple and grill for another 3 minutes, then remove from the pan.
  9. Add the red pepper to the griddle pan and grill for 3 minutes.
  10. Flip and grill on the other side for another 3 minutes then remove from the pan.
  11. Shred or slice the chicken.
  12. Dice the pineapple and the red pepper.
  13. Heat a splash of oil in a large pan over medium heat.
  14. Add a tortilla to the pan, top with cheddar cheese, chicken, pineapple, red pepper, barbecue sauce, and cilantro.
  15. Top with another tortilla.
  16. Cook for 2 to 3 minutes, checking regularly until the tortilla is browning and crisp.
  17. Carefully place a plate over the tortilla, and flip the pan upside down to remove the tortilla.
  18. Slide it gently back into the pan to cook the other side.
  19. Cook for another 1 to 2 minutes until the base is browned, then remove from the pan.
  20. Serve immediately, with sour cream, lime wedges, and more cilantro as desired.
