Ingredients
  • ¼ cup olive oil, plus more for serving
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 hothouse tomatoes, diced
  • 2 cloves garlic, minced
  • 2 teaspoons paprika
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon cumin
  • Salt and black pepper, to taste
  • 4 eggs
  • 2 tablespoons chopped parsley
Directions
  1. Heat the olive oil in a skillet over medium heat.
  2. Add onion and saute until translucent, about 5 minutes.
  3. Add bell pepper and saute for 2 minutes.
  4. Add the tomatoes, garlic, paprika, cayenne, cumin, salt, and pepper.
  5. Cook for 5 minutes, adding a touch of water to make the tomatoes saucier.
  6. Crack eggs directly into the tomato sauce and scramble.
  7. Continue cooking the eggs, scrambling constantly, until cooked to your desired doneness, about 10 minutes.
  8. Drizzle with more olive oil and sprinkle with parsley and cracked black pepper. Serve immediately, with pita, if desired.
