Elevated Coconut Cream Lush Recipe

Ingredients
  • 1 cup graham cracker crumbs
  • 2 teaspoons granulated sugar
  • 4 tablespoons melted butter
  • ½ cup milk, divided
  • 1 ¼ teaspoon plain gelatin
  • ½ cup heavy whipping cream
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup plain cream cheese, softened
  • 1 (3.4 ounce) box instant coconut cream pudding
  • 2 cups cold heavy whipping cream
  • 1 cup heaving whipping cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • ½ cup toasted shaved coconut
Directions
  1. Combine the graham cracker crumbs, sugar, and melted butter together until the crumbs are moist.
  2. Press firmly into the bottoms of 4 glasses.
  3. Freeze the crust for 30 minutes.
  4. Add ¼ cup milk to a bowl and sprinkle gelatin on top. Gently stir to combine. Soften for 15 minutes.
  5. In the meantime, add ¼ cup milk, heavy whipping cream, sugar, and vanilla to a saucepan.
  6. Heat, stirring constantly, until the cream begins to scald around the edges. Immediately remove from the heat.
  7. Add the gelatin mixture and the cream cheese and whisk to combine until smooth. Let cool.
  8. Stand the glasses at 45-degree angles using a ramekin and pour ½ cup of the cream cheese mixture into each of the tilted glasses.
  9. Chill for 4 hours, or until completely set.
  10. When ready to add the pudding: Beat the pudding mix into the heavy whipping cream until completely combined and thick.
  11. Pipe ½ cup of the pudding mixture into each of the glasses, smoothing the pudding with a spatula.
  12. Chill the lush for 30 minutes.
  13. Whisk the remaining 2 cups whipping cream, powdered sugar, and vanilla until soft peaks form.
  14. When ready to serve, pipe the whipped cream onto the lush.
  15. Top with shaved coconut to serve.
