Mushroom Burger Bowl With Special Sauce Recipe

Ingredients
  • ¼ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon minced dill pickles
  • 1 teaspoon pickle juice
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground paprika
  • ¼ teaspoon ground black pepper
  • 4 hamburger buns, cut into 1-inch pieces
  • 4 to 6 tablespoons olive oil
  • ½ teaspoon Kosher salt
  • ¼ teaspoon ground black pepper
  • ½ pound fresh mushrooms, like white button, cremini, shiitake, or oyster
  • 3 tablespoons butter, divided
  • ¼ cup (about 2 small) finely chopped shallot
  • 3 cloves garlic, minced
  • ½ teaspoon dried thyme
  • 2 tablespoons white wine vinegar
  • ½ pound ground beef
  • ½ teaspoon Worcestershire sauce
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 head romaine lettuce, chopped
  • ½ cup cherry tomatoes, quartered
  • 1 to 2 avocados, diced
  • ½ cup red onion, finely diced
  • ½ cup sliced Dill pickles
Directions
  1. Preheat the oven to 350 F.
  2. For the special sauce, combine the mayo, ketchup, Dijon, pickles, pickle juice, garlic powder, paprika, and black pepper in a mixing bowl and store in the fridge until ready to serve.
  3. For the hamburger bun croutons, toss the hamburger bun pieces, olive oil, salt, and pepper in a mixing bowl.
  4. Arrange the croutons on a baking sheet and bake in the oven for 15 minutes, stirring once halfway, until golden brown.
  5. For the mushroom burger, trim and finely chop the mushrooms.
  6. Melt 2 tablespoons butter in a large skillet over medium heat.
  7. Add the mushrooms, shallots, garlic, and thyme.
  8. Saute until the liquid from the mushrooms has evaporated, about 7 minutes.
  9. Stir in the white wine vinegar, cook until evaporated, then transfer the mixture to a bowl.
  10. Add the remaining 1 tablespoon of butter to the now empty skillet.
  11. Add the ground beef, Worcestershire sauce, salt, and pepper.
  12. Break up the beef into small pieces using a wooden spoon and cook until it's no longer pink.
  13. Stir in the mushroom mixture and remove from heat.
  14. To assemble the burger bowls, divide the lettuce between bowls.
  15. Top with the cooked mushroom-beef mixture, cherry tomatoes, avocado, red onion, pickles, and croutons.
  16. Drizzle each bowl with special sauce and top with Gruyère, if desired, and serve.
