Ingredients
  • 4 cups ripe cherries, pitted
  • ⅓ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon pineapple juice
  • 2 teaspoons vanilla extract
  • ⅔ cup flour
  • ⅓ cup packed light brown sugar
  • 3 tablespoons granulated sugar
  • 1 cup old-fashioned rolled oats
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
Directions
  1. Preheat the oven to 350 F.
  2. Lightly grease a deep 9-inch pie plate or 9 x 9-inch baking pan. Set aside.
  3. In a large bowl gently mix together the cherries, sugar, cornstarch, pineapple juice, and vanilla extract until the cherries are coated.
  4. Spread the cherry filling evenly into the prepared pan, set aside.
  5. In a large bowl mix together the flour, brown sugar, granulated sugar, oats, vanilla extract, baking powder, cinnamon, and salt.
  6. Add the melted butter to the bowl and mix until well combined.
  7. Spoon the topping evenly over the cherry filling, breaking up any large chunks.
  8. Bake in the preheated oven for 40-45 minutes, until the topping is golden and the filling is bubbly around the edges.
  9. Let cool for at least 10 minutes, then serve warm, with vanilla ice cream, if desired.
