Sesame Beef And Broccoli Wraps Recipe

Ingredients
  • 1 teaspoon vegetable oil or other neutral oil
  • 1 pound ground beef
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons honey
  • 1 teaspoon crushed red pepper flakes
  • ¾ pound (about 3 cups) broccoli florets, roughly chopped
  • 3 scallions, white and green parts minced and separated
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon kosher salt
  • 4 (10- to 12-inch) spinach tortillas
  • 2 cups cooked white or brown rice
  • 2 tablespoons toasted sesame seeds
Directions
  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the ground beef and cook, using a wooden spatula to break up the meat into small pieces, until no longer pink, about 5 minutes.
  3. Add the ginger and garlic and cook for 1 more minute, until fragrant.
  4. Add the soy sauce, honey, and crush red pepper flakes and cook until the liquid reduces, about 2 minutes.
  5. Transfer the cooked beef to a bowl. Leave about 1 tablespoon of rendered fat in the skillet. Discard the rest.
  6. Add the broccoli and ½ cup water to the pan with the beef fat.
  7. Cover and cook until al dente, about 1 to 2 minutes.
  8. Add the scallion whites, sesame oil, and salt.
  9. Transfer the broccoli to a bowl.
  10. Wrap the tortillas in paper towels and place them on a plate. Microwave for 15 to 30 seconds, until warmed through.
  11. Spread ½ cup ground beef, ½ cup rice, ½ cup broccoli, and 1 teaspoon sesame seeds evenly across the center of each tortilla.
  12. Working with 1 wrap at a time, fold the left and right sides over the filling, then fold up the bottom and roll it tightly around the filling.
  13. Slice the wrap down the middle and serve with extra soy sauce, sesame oil, and chile crisp, if desired.
