5-Ingredient Chicken Tikka Masala Quesadillas Recipe

Ingredients
  • 2 pounds boneless, skinless chicken breasts, sliced into strips
  • 1 (15-ounce) jar Tikka Masala simmer sauce
  • 4 medium flour tortillas
  • 1 ½ cups shredded Mexican blend cheese
  • 2 tablespoons chopped cilantro
  • Olive oil, for cooking
Directions
  1. Heat a drizzle of olive oil in large, non-stick skillet over medium-high heat.
  2. Add the chicken and cook until the chicken is cooked through, about 7 minutes.
  3. Add the simmer sauce to the skillet and stir until the chicken is coated in sauce.
  4. Bring the sauce to a simmer, cover the pan, and then simmer on low for 20 minutes.
  5. While the chicken simmers, preheat the oven to 425 F.
  6. Lightly grease a baking sheet with nonstick cooking spray.
  7. Place a tortilla on the baking sheet. Cover one half with roughly 3 tablespoons shredded cheese.
  8. Add one fourth of the chicken on top of the cheese.
  9. Sprinkle one fourth of the cilantro over the chicken.
  10. Top with roughly 3 tablespoons shredded cheese.
  11. Fold the tortilla in half so that the filling is covered by the other half of the tortilla.
  12. Brush the top of the tortilla lightly with olive oil. Repeat steps 7–12 with the remaining tortillas and filling ingredients.
  13. Bake in the preheated oven for 8 minutes.
  14. Flip the quesadillas over, then continue cooking for an additional 5 minutes, until golden brown.
  15. Slice the quesadillas and serve hot with sour cream or the sauce of your choice.
