Sticky Toffee Pudding Bundt Cake Recipe

Ingredients
  • 9 ounces pitted dates
  • 1 ½ cups water
  • 2 teaspoons baking soda
  • 1 cup unsalted butter
  • ½ cup granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups flour
  • 2 teaspoons baking powder
  • 1 cup dark brown sugar
  • ½ cup unsalted butter
  • 1 cup heavy cream
  • 3 tablespoons dark rum
  • ⅛ teaspoon salt
  • 1 teaspoon vanilla extract
Directions
  1. Preheat your oven to 350 F.
  2. Generously grease a 10-12 cup bundt pan with nonstick cooking spray.
  3. In a saucepan mix together the pitted dates, water, and baking soda and bring to a boil on medium heat.
  4. Remove the pan from the heat and gently mash the dates with a fork or a masher.
  5. Set aside the date mixture in the pan to cool completely and thicken while you continue with the cake.
  6. In the bowl of a stand mixture, cream together the butter and sugar until fluffy.
  7. Add the eggs and vanilla extract to the bowl and beat until combined and smooth.
  8. In a separate bowl whisk together the flour and baking powder.
  9. Add about half the flour mixture and half the cooled date mixture to the bowl of the stand mixer and beat until combined. Repeat with the rest of the flour and dates.
  10. Spread the cake batter into the prepared Bundt pan.
  11. Bake for 45-50 minutes, until a toothpick inserted into the cake comes out clean. If the edges are cooking too quickly you can cover the cake with foil halfway through baking.
  12. Let cool in the pan for 10 minutes, then invert onto a cooling rack to cool while you make the sauce.
  13. In a medium saucepan, combine the brown sugar and butter.
  14. Bring to a boil over medium heat and cook until the brown sugar has dissolved (about 3 minutes).
  15. Reduce the heat, then stir in the cream and rum and simmer on low for 5 minutes.
  16. Remove the pan from heat and stir in the vanilla and salt. Let cool (it will thicken as it cools).
  17. Pour the toffee sauce over the whole Bundt cake or individual slices as desired and enjoy!
