Summer Tomato And Blackberry Salad Recipe

Ingredients
1 large zucchini
2 cups blackberries
1 ½ cups halved cherry or grape tomatoes
1 cup corn
¼ diced red onion
¼ cup pistachios
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon maple syrup
2 teaspoons Dijon mustard
1 teaspoon salt
¼ teaspoon pepper
½ cup feta cheese
1 small avocado
¼ cup fresh basil
Directions
Cut and discard the ends of the zucchini.
Using a "Y" peeler, peel the zucchini to create ribbons. Discard the first few thin strips.
In a large bowl, add the blackberries, tomatoes, corn, and red onion.
Add the zucchini ribbons and pistachios.
In a small bowl combine the olive oil, vinegar, maple syrup, Dijon mustard, salt, and pepper.
Add the feta cheese and dressing to the salad ingredients and toss.
Peel and chop the avocado.
Slice the basil.
Top the salad with the avocado and basil.
Serve the salad.
