Blueberry Lemon Popovers Recipe

Ingredients
  • 1 ½ cups all-purpose flour
  • ¼ teaspoon salt
  • ¾ cup whole milk
  • ¼ cup sweetened condensed milk
  • 2 tablespoons unsalted butter, melted
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 cup blueberries
  • 2 tablespoons unsalted butter, cut into 6 pieces
Directions
  1. Preheat the oven to 400 F.
  2. Add the flour, salt, milk, sweetened condensed milk, melted butter, eggs, vanilla extract, lemon juice, and lemon zest to a large bowl.
  3. Whisk together until everything is combined.
  4. Use a blender or an immersion blender to mix the batter until it is smooth.
  5. Mix in about ¾ cup of the blueberries by hand.
  6. Once the oven is preheated, add the pieces of butter to a six-piece popover pan.
  7. Place the pan into the hot oven and heat for 2 minutes, until the butter is melted, then carefully remove the pan from the oven.
  8. Fill the popover cups about three-fourths full with the blueberry batter.
  9. Sprinkle the remaining blueberries on top of the batter.
  10. Bake in the preheated oven for 20 minutes without opening the oven door.
  11. Reduce the heat to 350 F and bake for an additional 15–20 minutes without opening the oven door, until the popovers have popped and are golden all over. Serve the popovers as soon as they are cool enough to touch.
