Elevated Patty Melt With Brandy Caramelized Onions Recipe

Ingredients
  • 2 tablespoons butter
  • 2 large Spanish onions, thinly sliced
  • 1 ¼ teaspoons salt, divided
  • 2 tablespoons brandy
  • 1 pound ground beef
  • ¾ teaspoon pepper, divided
  • 5 dashes Worcestershire sauce
  • 2 tablespoons neutral oil
  • ½ cup mayonnaise
  • 1 garlic clove, grated
  • 2 tablespoons finely chopped chives
  • 2 tablespoons finely chopped parsley
  • Juice from ½ lemon
  • 8 slices garlic Texas Toast
  • 4 ounces Fontina cheese, shredded
Directions
  1. Melt the butter in a skillet over medium heat.
  2. Add the thinly sliced onions and ½ teaspoon salt and cook, slowly, until softened, about 10 minutes.
  3. Once the onions begin releasing their liquid, reduce the heat to medium-low and cook until browned and soft, about 30 minutes, stirring occasionally.
  4. Add the brandy to the pot when the onions are mostly caramelized and let simmer until absorbed and jammy, about 10 minutes.
  5. While the onions are cooking, prepare the patties. Mix the beef, ½ teaspoon salt, ½ teaspoon pepper, and Worcestershire sauce until well combined.
  6. Divide the beef into 4 patties.
  7. Heat oil in a skillet over medium heat.
  8. Once hot, add the patties and cook on either side until browned, about 2 minutes per side.
  9. Remove and reserve the cooked patties and onions.
  10. Whisk together the mayonnaise, garlic, chives, parsley, lemon, and ¼ teaspoon each salt and pepper.
  11. Preheat the oven to 400 F.
  12. Arrange the Texas toast onto a sheet tray.
  13. Add a dollop of herb mayonnaise and a cooked patty to 4 of the pieces of bread.
  14. Add the fontina.
  15. Bake for 7 to 10 minutes, or until the cheese is melted and the bread is toasted.
  16. Add onions to each sandwich, then top with a second piece of toast. Serve immediately.
