Savory Texas Sausage Kolaches Recipe

Ingredients
  • 3 ¾ cups flour
  • 2 ¼ teaspoons instant yeast
  • 1 teaspoon salt
  • ¼ cup sugar
  • ⅔ cup warm milk (110-115 F)
  • 2 large eggs
  • 6 tablespoons butter, melted and cooled
  • 6 smoked sausages
  • ¾ cup shredded sharp cheddar cheese
  • 6 tablespoons diced canned jalapeños
  • 1 egg
  • 1 tablespoon milk
Directions
  1. In the bowl of a stand mixer with the dough hook attached add the flour, yeast, salt, and sugar and mix until combined.
  2. Add in the warm milk, eggs, and melted butter and knead until the dough forms a ball and no longer sticks to the side of the bowl (about 5 minutes).
  3. Grease a separate clean bowl with nonstick cooking spray.
  4. Place the ball of dough in the greased bowl and cover the bowl with plastic wrap or a dish towel.
  5. Place the bowl in a warm draft-free spot and let the dough rise for 1 ½ to 2 hours, until doubled in size.
  6. Cut the smoked sausages in half and set aside.
  7. Divide the dough into 12 equal balls.
  8. Use a rolling pin, roll each piece of dough out to about a 7 x 5-inch rectangle.
  9. Place 1 tablespoon shredded cheese, ½ tablespoon diced jalapeños, and one half of a sausage on each piece of dough.
  10. Fold the longer side over the sides of the sausage and pinch the top to seal.
  11. Fold the remaining sides of the dough up and pinch the edges to seal, then press down the edges to flatten them.
  12. Line a large baking pan with parchment paper.
  13. Place the kolaches seam-side down on the baking sheet. Let them rise for an additional 30 minutes.
  14. Preheat the oven to 400 F.
  15. In a small bowl whisk together the egg and tablespoon of milk until combined.
  16. Brush the tops and sides of the kolaches with the egg wash.
  17. Bake in the preheated oven for 15-20 minutes until golden brown.
  18. Serve warm.
