Ingredients
  • 3 ½ cups whole milk
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • Zest of 1 large lemon
  • 1 vanilla pod, sliced
  • 1 cardamom pod, lightly crushed
  • ½ cup short-grain white rice
  • 1 tablespoon unsalted butter
Directions
  1. Add the milk, cream, sugar, lemon zest, vanilla pod, and cardamom pod to a large saucepan over medium heat.
  2. Heat the mixture until it is simmering.
  3. Add the rice to the saucepan.
  4. Let the mixture gently simmer over low heat for 30 minutes, stirring occasionally, until the rice is cooked through.
  5. Remove the rice pudding from the heat and stir in the butter.
  6. Serve warm or cold.
