Fall-Worthy Maple Pecan Sweet Potato Cookies Recipe

Ingredients
  • ½ cup unsalted butter, room temperature
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 teaspoon maple syrup
  • ¾ cup sweet potato puree
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 cup chopped pecans
Directions
  1. Add the butter, granulated sugar, and brown sugar to a large mixing bowl. Beat until combined and fluffy.
  2. Add the egg, vanilla extract, maple syrup and sweet potato puree and beat until smooth.
  3. Add in the flour, baking soda, cinnamon, nutmeg, and salt and beat until combined. The dough will be pale.
  4. Mix in the chopped pecans until incorporated. Refrigerate the dough for at least 30 minutes.
  5. Preheat the oven to 350 F.
  6. Line 2 baking sheets with parchment paper.
  7. Use a medium cookie scoop to scoop the dough onto the prepared baking sheets.
  8. Bake in the preheated oven for 12-14 minutes, until the cookies are golden brown.
  9. Let the cookies cool, then serve.
