Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, crushed
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 pound jumbo shrimp, shell on
  • 1 teaspoon fresh parsley, chopped
  • 2 lemon slices, to serve
Directions
  1. In a large bowl, mix together the olive oil, lemon juice, crushed garlic, paprika, oregano, basil, salt, and pepper.
  2. To prepare the shrimp, begin by twisting off the heads.
  3. Remove the outer shells, leaving the tails in place.
  4. De-vein the shrimp by carefully making a slice down the back of each, then pulling out and discarding the veins.
  5. Toss the shrimp in the marinade until well coated, and then leave for 20 minutes.
  6. Thread the marinated shrimp onto skewers.
  7. Heat a heavy bottom pan or griddle pan to a medium-high heat.
  8. Add the shrimp to the pan.
  9. Cook on one side for 3 minutes until pink and lightly charred.
  10. Turn and cook for another 2 to 3 minutes until the shrimp are cooked through.
  11. Serve immediately, with a sprinkling of chopped parsley and the lemon slices.
