The Arugula Salad Recipe That Pairs Perfectly With Pizza

Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon maple syrup
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup raw and unsalted sunflower seeds
  • 8 cups arugula
  • ½ red onion, sliced
  • 2 tablespoons chopped chives
  • 1 cup canned mandarin oranges, drained
  • 1 diced avocado
Directions
  1. In a jar, add the olive oil, vinegar, lemon juice, Dijon mustard, syrup, salt, and pepper.
  2. Whisk briskly or use an immersion blender to emulsify.
  3. Add the sunflower seeds to a pan over medium heat for 5 to 8 minutes, until toasted.
  4. Add the arugula, red onion, chopped chives, mandarin oranges, avocado, and toasted sunflower seeds to a large bowl.
  5. Add dressing and toss.
  6. Serve the salad.
