Slow Cooker Roast Beef Sandwich Recipe With A Whisky Twist

Ingredients
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1 teaspoon paprika
  • 1 teaspoon brown sugar
  • 2 ½ pounds beef chuck roast
  • 1 cup beef stock or broth
  • ¼ cup rye whisky
  • 2 tablespoons Dijon mustard
  • 1 tablespoon tomato paste
  • 4 cloves garlic, peeled and smashed
  • 4 ciabatta rolls
  • 4 slices provolone cheese
  • 1 cup arugula, for serving
Directions
  1. In a small bowl, mix together the garlic powder, onion powder, salt, pepper, paprika, and brown sugar.
  2. Rub over the beef roast on all sides.
  3. Add the beef stock, whisky, mustard, tomato paste, and garlic to the crockpot and stir to combine.
  4. Add the beef roast and cover. Cook on low for 8 to 9 hours or high for 6 to 7.
  5. Shred the beef into large pieces.
  6. Preheat the broiler to high.
  7. Add the rolls to a baking sheet. Fill with the shredded beef.
  8. Top with the cheese.
  9. Broil for 3 to 5 minutes, or until the cheese is melted and the buns are toasted.
  10. Add arugula to the sandwiches to serve.
