One-Pot Thai Coconut Soup Recipe

Ingredients
1 tablespoon olive oil
1/2 yellow onion, diced
1 teaspoon crushed ginger
8 ounces shiitake mushrooms, sliced
32 ounces chicken broth
2 dried ancho chiles
1 (15-ounce) can coconut milk
1 tablespoon red curry paste
2 tablespoons fish sauce
2 cups cooked shredded chicken
2 tablespoons lime juice
1 teaspoon chopped cilantro
Directions
In a large skillet over medium heat, add olive oil. Once hot, add onion, and cook until onion is translucent, about 5 minutes.
Add ginger and mushrooms. Cook for another 5 minutes.
Add chicken broth and ancho chiles. Bring to a boil and lower to a simmer. Simmer for 15 minutes.
Add coconut milk, red curry paste, fish sauce, and cooked chicken. Simmer for 5 minutes.
Add lime juice and cilantro.
