Ingredients
  • 1 tablespoon butter
  • 3 eggs
  • 1 ¼ cups all-purpose flour
  • ½ cup sugar
  • 1 ¼ cups milk
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
  • 2 cups fresh blueberries
Directions
  1. Preheat oven to 350 F.
  2. Spread the butter in a cast iron skillet, covering the bottom and sides.
  3. Crack the eggs in a large bowl, and beat lightly.
  4. Add the flour, sugar, milk, vanilla, and salt. Whisk to combine well.
  5. Pour the blueberries into the greased cast iron skillet. Then, pour the batter over the blueberries.
  6. Bake for 45 minutes, or until the edges are brown. Some areas may puff up during cooking.
  7. Cool on a wire rack for 30 minutes before cutting.
  8. Serve as-is, or top with whipped cream.
