Roasted Caprese Sandwich Recipe

Ingredients
  • 2 cups cherry tomatoes
  • 4 large cloves of garlic, skin on
  • 3 tablespoons olive oil, divided
  • salt and pepper
  • 3/4 teaspoon Italian seasoning
  • 2 demi baguettes, or substitute sourdough or ciabatta rolls
  • 4 ounces fresh burrata, either one large ball or mini balls
  • balsamic vinegar for drizzling
  • 1/2 cup basil leaves
Directions
  1. Preheat oven to 400 degrees. Place tomatoes and garlic cloves in a baking dish. Drizzle with 2 tablespoons of olive oil. Season with salt and pepper and Italian seasoning.
  2. Roast for 25 minutes until the tomatoes just begin to burst.
  3. Meanwhile cut the baguettes in half lengthwise. Drizzle the inside halves with the remaining tablespoon of olive oil.
  4. Remove tomatoes from the oven and reduce oven temperature to 375. Place the baguettes in the oven and toast for 5 minutes. Remove from oven.
  5. Remove the garlic cloves from the baking dish and squeeze the garlic out from their skins. Spread the roasted garlic on the bottom halves of the baguettes.
  6. Layer the baguettes evenly with the burrata. Top with the roasted tomatoes. Drizzle with balsamic, and add basil. Serve immediately.
