No-Bake Strawberry Cheesecake Recipe

Ingredients
  • 9 to 10 full-sized graham crackers, broken into pieces
  • 2 tablespoons + 1 cup sugar, divided
  • ½ cup butter, melted
  • 1 cup strawberries
  • 2 cups cream cheese
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping
  • 4 tablespoons strawberry jam
Directions
  1. Blitz the graham crackers, 2 tablespoons sugar, and melted butter in a blender or food processor to make crust.
  2. Press crust mixture into the bottom of a springform pan.
  3. Wash and hull the strawberries.
  4. Blend strawberries,1 cup of sugar, cream cheese, and vanilla extract.
  5. Fold the strawberry mixture with the whipped topping and jam in a medium-sized bowl.
  6. Pour the mixture into the springform pan over the crust and spread out evenly.
  7. Freeze for at least 2 hours, and thaw for 30 minutes before cutting and serving.
