Thai Red Curry Chicken Recipe

Ingredients
  • cooking spray
  • 1 1/2 pounds chicken breast, cut into strips
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 1 tablespoon minced garlic
  • 1 tablespoon Thai red curry paste
  • 1 (15-ounce) can unsweetened coconut milk
  • 1/2 teaspoon ground coriander
  • 1 teaspoon crushed ginger
  • 2 cups baby spinach
  • cooked white rice, for serving
  • fresh cilantro, chopped, for garnish
Directions
  1. Preheat the oven to 400 F. Spray a large baking sheet with nonstick cooking spray.
  2. Place the chicken strips onto the baking sheet and bake for 20 minutes, or until the internal temperature measures at least 165 F.
  3. Meanwhile, in a large skillet over medium heat, add the olive oil. Once the oil is hot, add the onion. Sauté until translucent, about 8 minutes.
  4. Add the garlic, red curry paste, coconut milk, coriander, and ginger. Stir well and simmer over low heat while the chicken continues to cook in the oven.
  5. Once the chicken is cooked, remove it from the oven and add the strips to the curry sauce. Stir well.
  6. Add the baby spinach and stir into the sauce, allowing it to wilt down.
  7. Serve over rice, and garnish with cilantro.
