Ingredients
  • 1/2 cup mint leaves
  • 1/2 cup spinach
  • 1/4 cup whole almonds, unsalted
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Directions
  1. In a food processor, add all ingredients.
  2. Process on high until smooth, scraping down the sides of the bowl to make sure all ingredients are well incorporated.
  3. Taste and adjust seasoning if needed.
  4. Serve with pasta.
