- 6 hard boiled eggs
- 5 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons pickle relish
- 1 teaspoon white balsamic vinegar
- ΒΌ teaspoon paprika
- salt, to taste
- pepper, to taste
- Peel the hard boiled eggs, and cut them in half.
- Remove the yolks, and set them aside.
- Chop the egg whites into bite-size pieces, and set them aside.
- In a medium-sized bowl, combine the yolks with the mayonnaise, Dijon mustard, pickle relish, white balsamic vinegar, and paprika.
- Mash the ingredients together with a fork until the mixture is mostly smooth. (Some lumps are good.)
- Add the egg whites to the yolk mixture, and combine.
- Add salt and pepper to taste.
- Serve this deviled egg salad garnished with fresh chives.
