Spicy Garlic Eggplant in bowl
Ingredients
  • 3 Chinese eggplants, chopped
  • ½ teaspoon salt
  • ½ red onion, diced
  • 3 cloves garlic, minced
  • 1 inch of fresh ginger, minced
  • 3 Thai chilis or Fresno peppers
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili paste
  • 1 teaspoon cornstarch
  • 3 scallions, chopped
Directions
  1. Chop the eggplant into chunks and place in a colander. Shake some salt on the eggplant and set in the sink for 15 to 20 minutes to help release some of the water.
  2. Chop the onion, garlic, ginger, and chilis.
  3. Add the sesame oil to a frying pan and heat to medium-high. Add in the onion, garlic, ginger, and chilis.
  4. Cook for 5 minutes, adding water to the pan if it gets dry.
  5. While that is cooking, mix up the soy sauce, rice vinegar, chili paste, and cornstarch.
  6. Add the eggplant to the frying pan and cook for about 5 minutes. Add the soy sauce mixture and simmer for a few minutes.
  7. Remove from stove. Add chopped scallions, sesame seeds, red pepper flakes, and a squeeze of lime before serving. Goes great with rice!
